Nutrient-Rich Winter Recipe: Quinoa and Roasted Vegetable Bowl
Ingredients:
1 cup quinoa, rinsed
2 cups mixed winter vegetables (sweet potatoes, Brussels sprouts, carrots)
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
1 cup baby spinach
1/4 cup pomegranate seeds
1/4 cup feta cheese (optional)
Directions:
Preheat the oven to 400°F (200°C).
Toss the mixed vegetables with olive oil, cumin, paprika, salt, and pepper.
Roast the vegetables for 20–25 minutes, or until golden brown and tender.
While the vegetables are roasting, cook the quinoa according to the package instructions.
Assemble your bowl by layering quinoa, roasted vegetables, and baby spinach, and topping with pomegranate seeds and feta cheese if desired.
